Barley Wine aged in Bourbon Barrels
Over the years, Paragon has become one of our flagship beers. What makes our barley wine special is that it is always brewed with the exact same recipe, but each edition is unique due to a number of factors, barrel types and environmental factors to say it briefly. In 2023, we used fresh, high-char Jim Beam barrels in which the beer matured for one year. We think the result is pretty awesome and can best be described as a Kentucky hug. Enjoy – it’s a great year for Paragon.

Bb 27.09.2029. brown color, tiny head. smells vanilla, nutty, Marzipan, bourbon, hints of dried fruits, very nice complex smell. full body, light carbonation. tastes sweet, marzipan, vanilla, nutty, light honey, bourbon, rather complex. finishes light to medium sweet with notes of vanilla, nutty and Marzipan notes. Very nice one, rather complex, a tad on the sweet side, but overall very good. Rather Marzipan forward

Smell of sweet malt, raisins. Hazy bronze colour, tiny beige head. Aroma of dried fruit, sweet malt, raisins, booze, some oak. Sweet. Lively carbon. Slightly oily texture. Intense.

Sweetish malty, stingy woody and oaky with some bourbon, vanilla, toffee, raisins, prunes, figs, syrup, caramely toffee, hints of chocolate and warming alcohol. Complex slow sipper, quite balanced and tasty.

Full body, med-light carbo. High sweet, med-high bitter, med warmth. Med-high bourbon, medium woody, vanilla, a bit of coco. Med caramel. Light acetic, which improves the complexity even. Med-high dried fruits. Very nice.

Tap at Valhalla, thx Eitan! Murky brownish body, tiny off-white head. Vanilla and caramel, some wood in the aroma. Vanilla, caramel and coconut in the pretty dry taste, bit of alcohol, bit astringent but nice!

Aus der Flasche im 2025-02 getrunken. Gewohnt ist dieses Paragon ein sehr klassisches Barley Wine in Perfektion. Auch hier treffen die typischen Getreide-/Sauerteigaromen auf ein volle Malz- und Vanillearomen. Und das ohne süß oder alkoholisch zu wirken. Das macht schon richtig Spaß!

Dark ruby colour and tiny white head. Toffeish, some whiskey in the nose. Medium-bodied to full-bodied. Sweet, malty, toffeish. Pleasant sweet sipper. TCBW 2025.
