A fall inspired version of Bam Bière - a richer, fuller recipe to start and of course we added a lot of chestnuts to the mash as well! Rich auburn, gently tart, notes of earthy chestnuts, flavors of cashew, taro, traces of autumn smoke and a slightly orange juiciness in the finish.

One day Bam, being the little gentlemen that he is, decided to become a farmer. He planted a veritable sea of chestnut trees, sat back and enjoyed the gentle whisper of the wind through their leafy green canopies. Every fall he enlists a lively horde of hard working squirrels to help him harvest the nuts for later roasting on an open fire. Then he sits back again and enjoys life. And his Michigan grown chestnut beer.

Pours hazy gold into a snifter. White head with medium retention recedes to skim surface. Lemony funk aromas. Medium bodied with sweet band aid and lemons upfront turning to tart, bitter earth and dusty pith in the lasting finish.

375 ml bottle into tulip glass, bottled on 9/7/2016. Pours moderately hazy/cloudy golden orange color with a 1-2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big tart lemon, lime, orange, pear, green apple, white grape, chestnut, peppercorn, hay, straw, grass, musty funk, wheat, cracker, oak, and herbal/yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy/funky yeast, chestnuts, oak barrel, and light-moderate pale malt notes; with great strength. Taste of big tart lemon, lime, orange, pear, green apple, white grape, chestnut, peppercorn, hay, straw, grass, musty funk, wheat, cracker, oak, and herbal/yeast earthiness. Large amount of peppery yeast spiciness and moderate tartness on the finish; with lingering notes of tart lemon, lime, orange, pear, green apple, white grape, chestnut, peppercorn, hay, straw, grass, musty funk, oak, and herbal/yeast earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/spicy/funky yeast, chestnuts, oak barrel, and light-moderate pale malt flavors; with a great malt/tart/spiciness balance, and zero astringent flavors after the finish. Medium-high carbonation and light-medium body; with a very smooth, crisp, dry, and fairly acidic/grainy/sticky balanced mouthfeel that is great. Zero warming alcohol as expected of 4.5%. Overall this is an excellent saison! All around great complexity, robustness, and balance of fruity/spicy/funky yeast, chestnuts, oak barrel, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink. Feels a bit more tart/acidic than I remember the base beer in the past. The chestnuts have good presence, and compliment the funk/barrel notes very well with earthy/nutty flavors. A very enjoyable offering.
