A fall inspired version of Bam Bière - a richer, fuller recipe to start and of course we added a lot of chestnuts to the mash as well! Rich auburn, gently tart, notes of earthy chestnuts, flavors of cashew, taro, traces of autumn smoke and a slightly orange juiciness in the finish.
One day Bam, being the little gentlemen that he is, decided to become a farmer. He planted a veritable sea of chestnut trees, sat back and enjoyed the gentle whisper of the wind through their leafy green canopies. Every fall he enlists a lively horde of hard working squirrels to help him harvest the nuts for later roasting on an open fire. Then he sits back again and enjoys life. And his Michigan grown chestnut beer.

Bottle at home, 04/09/17. Hazed orange, floaties evident, moderate off white head that soon dissipates. Not a looker ! Nose is barnyard, orange peel, white peppery spice, damp straw, faint yeasty strokes. Taste comprises bitter citric peel, tangy orange, hay bale, light wooded notes, faint spice. Medium bodied, fine carbonation, semi drying close. Nice earthy saison .... delivers a good depth of flavour for the ABV.

Nice aroma, leans mostly sourdough, light floral, a little funk. Doughy malts, fair degree of tartness, lactic, a little spicy, carbonic bite, somewhat bready at the finish with a fair bitterness. Very cloudy orange-gold, med head. Mostly dry at the finish.

Good beer. Aroma is the best thing where the chestnuts give a perfumey exotic Aroma when blended with the characteristics from the rest of the sour beer. Flavor is bitter sour with a hint of fruit in the Finish

On tap at Whole Foods Post Oak. Pours a cloudy gold with medium frothy white head that lasts. The aroma is strong oak, barnyard, lemon zest. Medium body, oak, funk, earth, lingering dry finish, very good.

Pours a thick, hazy, yeast-laden gold with a fat head that retreats rather quickly. Tart as hell on the nose--almost a mustard and dill relish vibe kickin’ up from the pint. The taste isn’t nearly as sour as the aroma suggests; pulls closer to a traditional saison, full of haystack malts and a mildly floral, nutty undercurrent. Front-loaded tartness quickly melts into the background but never fully disappears, leading to a lengthy fade with the slightest hop bite. Chestnuts seem to add a lingering aspirin-like bitterness, not my favorite way to finish a beer. Needs age; we’re at four months on this bottle and it still comes across young.
