A fall inspired version of Bam Bière - a richer, fuller recipe to start and of course we added a lot of chestnuts to the mash as well! Rich auburn, gently tart, notes of earthy chestnuts, flavors of cashew, taro, traces of autumn smoke and a slightly orange juiciness in the finish.
One day Bam, being the little gentlemen that he is, decided to become a farmer. He planted a veritable sea of chestnut trees, sat back and enjoyed the gentle whisper of the wind through their leafy green canopies. Every fall he enlists a lively horde of hard working squirrels to help him harvest the nuts for later roasting on an open fire. Then he sits back again and enjoys life. And his Michigan grown chestnut beer.

Bottled. Hazy golden colour with a small white head. Aroma is fruity, citrusy and some slight funky and wooden notes. Flavour is citrus, fruity and mild funky with some herbal and mild yeasty notes.

Pours slightly hazy dark golden color with white head. Funky, nutty aroma with some oak. Tart funk and oak flavors with a hint of cashews. Medium body with lively carbonation.

Golden, just a bit of haze. Pretty big head. There's a nice bit of brett on the nose, but on the palate it's bitter, thin and harsh, Just a touch of brett. Not getting a whole lot of chestnuts.

375mL bottle, pours a clear golden blonde with a medium white head. Aroma brings out toasted nuts, rustic saison yeast, and a touch of funk. Flavour is quite funky, with rustic farmhouse yeast, some funk, and toasted nuts. Funky and rustic, with a dry, lightly citric finish. Very good.

Bottle from 2016 shared at Kim Yong Un buurtcentrum. Hazy golden with big white head and some yeast floating around. Soft spicy yeast, light lactic, lemon, wheat, quite floral, lots of Brett, soft white wine, light earthy, more floral and herbal notes, reminds me of spring. Under medium sour, sweet and bitter. Over light bodied with soft creamy feel. Really like it though I don’t get any chestnuts.

8 3 8 3 16Bottle shared at TZT mini-pilot, Zaandam. Fairly hazy golden with an off white head. Aroma of brett, yeast, peppery notes, citrus and oak. Flavour is moderate sweet and light moderate sour with light bitter. Medium bodied with soft carbonation.

Bottle. Pours hazy yellow, with a big creamy head. Aroma is tart yeasty notes of wood, nuts and farmyard notes, as well as bretty floral notes. Medium body, with average carbonation. Flavour is sour, wooden brett, with hay, lemon and citrus peel, as well as floral notes and nuts. Dry finish.

Bottle at home, from 2016. Cloudy in appearance with just a bit of residue. Aroma is funky and citrusy; the brett is there, the sourness doesn't completely take over though. Rich sweetness, malt is accompanied by the nutty, earthy aromas of the chestnuts. Nice balance and good complexity. Light to medium body. Flavours are a mix of pale malts with a touch of caramel and an acidity which doesn't take over. Really refreshing with tart citrus flavours. Earthy flavours and nuttiness is also quite present and integrates itself nicely into the flavour profile. Finish is rather dry and tart. Really lovely saison, distinctly sour but not overtly so.
