Foeder Aged Spontaneous Ale with Orange Zest, Cocoa Nibs, Fenugreek, & Tamarind
This beer has taken quite the journey to get here! Over two years ago we decided that we wanted to add variety to our spontaneous lineup, so we brewed an amber base, cooled it overnight in the coolship, and threw it down into our 30bbl oak foeder. After two years of aging and mellowing out, we decided on some light additions of spices and tangy tamarind to up the complexity even more, while still allowing the old world sour base shine through. “You taste something new every sip!” - Sweet Lu. 7% abv - 1512 bottes produced

Rødbrun klar med beige skum. Lukter bæreddik, stenfrukt og fyrstikk. Middels fylde. Sursyrlig. Smaker grønne epler, sitron og noe trevirke. Middels lang.

Klar mørk brun med lys beige skum. Lukter svovel og syrlige frukter. Syrlig med smak av sitron, gjær og andre frukter. God😃

8-3-7-4-14 Bottle, vintage 2021, four years before bbd. Pours hazy mahogany, with a creamy beige head. Aroma is slightly acetic notes with balsamic vinegar, sour plums, wine grapes and notes of bergamot, as well as tannins and wooden notes. Medium body, with average carbonation. Flavour is acetic notes of balsamic vinegar, sour plums, wine grapes and fizzy candy, as well as tannins and wooden barrels.

Bottle from Tavour: pours clear brown with a light beige head. Aroma is loads of apice, vinegar and tamarind. Taste is a lot is spice but combatting against the powerful tamarind. Good stuff.
