Our brand new creation is rising high with the flavors of the baklava, the galaxy’s most beloved dessert. A massively caramelly sweetness as a backbone shows the mild spiciness of rye and oak, while the dominating tasting note comes from the roasted pistachios, nicely balanced out by the citrus zests, so the final product won't be too sticky. Already thinking about another version focusing more on the chocolaty notes... Who knows? Life is crazy.

Barleywine brewed with Muscovado, Pistachio, Lemon and Orange zest and cinnamon. Rye bourbon barrel aged. Well that will be me 40k then, slightly delayed because I had to spend 10 mins getting past the bomb proof wax on this bottle - jesus! At least I'm sitting with the Mrs, nothing to do and all day to do it, relaxed and happy. Near opaque dark brown beer, small and relatively short lived tan head. Smooth palate, a mild viscosity, reasonable fine carbonation, fine for the style. Soft rich malts, dark chocolate and dark chocolate cream. Lots of ripe bourbon soaked fruits. Floral aspects in the mid. The pistachio and cinnamon are really well integrated as is the orange and lemon. Once again, the Mad Scientists take a broad and diverse range of ingredients and balance them well. The end result here is a kinda semi dessert barleywine cocktail mash up. Interesting and very quaffable.

TCBW2024. Deep brown/close to black colour with a small head. Aroma is sugary, some alcohol, toffee, nutty and mild chocolate cookies to it. Flavour is quite similar with a bit honey to it also. Baklavaish dessert beer

Sample@TCBW2024. Dark brown colour and not much head. Peanut, alcohol, perfume aroma. Full-bodied. Chocolate cookies, sweetish, peanut, dessert.
