Adam is special. He applied to Volo back in 2018 with no experience - pretty green all around. At the time the only thing we had in common was upcoming adidas sneaker and lambic releases. Due to his talkative personality we decided to keep him around and show him a few tricks or two that lasted around 1.5 years. Alas, the final bottarga plate was served and Adam moved on to study brewing at Siebel - a well recognized brewing course in Chicago. Shortly after, he started to contract the True History label with his friend Matt and eventually opened up a brewpub on St. Clair.

𝒲𝒽𝑒𝓃 𝐼 π’²π‘œπ“‡π“€π‘’π’Ή π’œπ“‰ π’±π‘œπ“π‘œ is bold, clean and assertive with a gentle roast bitterness. Chocolate and dark dried fruit notes lead to a clean lager finish that begs for another sip.

Black pour, with a medium beige head. Soft, fruity malts, roasty, but not over the top, subtle coffee, hints of licorice. Silky mouth feel, nice carb. Medium to highly bitter, fruity malts, plums, big roast, coffee, semi dry finish.

Can: Poured a pitch-black color stout with a large dark brown foamy head with good retention and some light lacing. Aroma of roasted malt with some chocolate malt notes and some bitter notes. Taste is also a mix of chocolate malt notes with some bitter notes and a dry finish. Body is about average with good carbonation. Well made baltic porter though maybe a tad too dry.
