A wort made with rye, oats, barley and wheat is boiled for three hours with aged hops and finished with a new English variety Olicana. Fermented with our house mixed culture in ex-bourbon and wine barrels, small numbers of barrels from multiple brews are selected to blend each batch.

Bottle shared during Cott Wines Convention; slightly hazed golden amber pour with a broken beige head, aroma has citrus, slight barnyard funk, taste has apple, some citrus.

Bottle at Cider Salon, 2018. Hazy golden colour, thin white foam head and funky aroma. Taste is sour, citric, pale malt and tangy bitter. Medium bodied, soft carbonation, dry finish. Quite drinkable.

Bottle at Cotteridge Convention 2018. Hazy pale gold colour lasting white head. Some sourness. Some lemon . Some sourness. Decent lemon sour refreshment.

Shared at the Cotteridge Convention, 2018. Poured a hazy straw colour with a frothy white head. The aroma is yeasty, tart fruity. The flavour is moderate sour with a crisp sour yeasty, light tropical pineapple fruit palate. Medium to light bodied with average carbonation.

On keg at the Hanging Bat. Appearance - golden and hazy. Neat lacy head. Nose - apple vinegar. Wood, light winey note. Taste - more cider vinegar. Funky, earthy undernote. Palate - light to medium bodied. Long, lean and tangy. Overall - sour by numbers.

Keg at the Hanging Bat. Pours hazy golden yellow with a thin white head. Very funky nose, sherbet, oak. Taste is dry, earthy, sour Brett funk. Dry finish.
