A wort made with rye, oats, barley and wheat is boiled for three hours with aged hops and finished with a new English variety Olicana. Fermented with our house mixed culture in ex-bourbon and wine barrels, small numbers of barrels from multiple brews are selected to blend each batch.

The least interesting of the Mills beers at the festival, but still damn good. Very gentle and easy, and nicely refreshing. Lightly sour, lots of oak. Some sweet fruit (dried apple, apricot) and a hint of funk. No running.

Blend five. Bottle from BXL Box. Clear yellow with white head. Loads of citrus, some dry grass, floral lavender and some earthy funk. Great!

Bottle, blend 5, BXL Edition. Unclear golden color with white head. Aroma is flowery, citric, earthy, leathery. Taste is earthy, leather, citric, very nice balance. Oily mouthfeel with medium carbonation. Nice one, some serious Lambic character there!

Pale metallic orange-golden beer, very finely carbonated to a small, if relatively stable white head, irregular. Beautiful lambic-y nose, with barnyard, horseblanket, leathersoap, citruspeel with mould, unripe grapes or non-vitifera white grapes. Sour, grapey, fruity, barnyard flavours in the very best possible (lambic) way. All acids (lactic acid, ...) are mild - mals as they ought to be. Fine lemonsquash. Somehow, though it's tart, has (mild) acidthinning, it gives one a chewy feel, like it wants to be nibbled upon. No doubt the oats help here. This is genisu, a top achievement! +1 point, just because it made me so unexpectedly happy! Many thanks to Louis!

Pretty good for non-lambic lambic sour. Nicely funky and acidic, in the blind tasting i would guess it is lambic really.
