A wort made with rye, oats, barley and wheat is boiled for three hours with aged hops and finished with a new English variety Olicana. Fermented with our house mixed culture in ex-bourbon and wine barrels, small numbers of barrels from multiple brews are selected to blend each batch.

Clear warm golden colour, white head. Fruity aroma, white wine, apricot, orchard fruits, malts. Malty flavour, white wine, light sour, relatively bitter. Fruity finish, apricot, apricot kernels, white wine, pronounced bitterness. Nice! (from 75cL bottle shared @ Tim's place)

Light sour blonde, part of the ‘exclusive’ beer pack of six large bottles that were sold at the BXL Beerfest; shared with Ama Deke, John Versyck and Steve De Decker on the train ride home to Ghent. Gusher, but not too fiercely so. Thick, large-bubbled, egg-white, foamy head on a hazy straw blonde beer with deep ‘old gold’ tinge. Aroma of green gooseberries, strong butter and melting margarine (diacetyl no doubt), old moldy lemons, yoghurt, unripe pineapple, pear, peach, white grapes, cloves. Sour onset but in a softly tart and very fruity way, with some hidden sweetness underneath, notes of gooseberry, green plum and sour wild apples, fizzy carb, slick and even somewhat vinous body, dried by this elegant fruity tartness as well as yoghurty lactic sour effects; the buttery touch of diacetyl indeed reappears in the middle but does not bother me too much, as it does not distract from this smooth, elegant flavour ‘parcours’, which ends in a refreshing fruitiness, ‘noble’ earthiness and crisp lemony sourness, along with traces of lingering sweet maltiness. This is an exemplary modern sour ale in my book, very much to the point and well-balanced for the style, juicy and refined. I need to find more from this brewery, too bad I didn’t have anything from them at the BXL Beerfest itself, in retrospect.
