A barrel-aged Saison fermented with our House culture (a blend of Saison and Brettanomyces strains) and aged in a single Chardonnay barrel, Evolution has notes of fruit, funk, and a complementing background of oak character.

Bottle: Poured a golden color ale with a large white foamy head with OK retention and light lacing. Aroma of rustic malt with some funky dry ester with some vinous notes. Taste is a great mix of rustic malt with some dry Brett notes with some vinous notes with a dry finish. Body is about average with good carbonation. Wonderful saison with Chardonnay notes providing great complexity.
