We’re excited to introduce our lastest beer — Jester King Bière de Miel. Named after the classic style (honey beer), Jester King Bière de Miel was brewed, fermented, and naturally conditioned with raw, Texas wildflower honey. We sought to take the classic style and impart a sense of place in the beer through wild fermentation with naturally occurring yeast and souring bacteria harvested from the Texas Hill Country.

Bottle 750ml. [ As Jester King Bière de Miel ]. [ Batch 4 ]. Light unclear medium yellow colour with a large, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, pale malt, sweet malt, honey, moderate yeasty, saision yeast, herbs, fruit. Flavor is moderate sweet and light acidic with a long duration, tart fruit - grapes, saison yeast, pale malt, honey sweet, fruit peel - skin. Body is medium, texture is oily to watery, carbonation is soft. [20170930] 7-3-8-3-15

August 2016, Batch 4 bottle drunk 7/18/17.
Clear brass, light carbonation apparent. Forms a small, white head with low retention, some rockiness.
Strong grass, straw, cracker and yellow fruits show both grainy, rustic malts and strong Saccharomyces. Nice white pepper and other Belgian phenols with light cereal-like wheat helping to balance/soften. Extremely low on the lactic or even Brett character which is surprising as their house blend is usually quite heavy on both.
In the mouth it's full of honey though it is still properly attenuated. Soft, sweet and round with tight, engaging carbonation and teeming with Sacch-derived esters and phenols. Pepper, apples, pears, etc...and no banana/clove/bubble gum. Dries out nicely on the finish and comes off quite light for 6%. Very surprised/impressed at how well this has aged/developed.

Bottle "Batch 4", 5.9%. Slightly hazy yellow with small white head. Aroma is malt, yeast, fruit, spices and herbs. Flavour is malt, fruit, spices, fruit peel, yeast, little sweet, little dry, little honey, little citric, medium bitter and a little dry.

Bottle. Creamy white good mostly deminishing head. Yellow colour. Moderate malty and hoppy aroma. Moderate bitter flavor. Average light bitter finish. oily palate.

Bottle @ fonefan tasting. Hazy golden with a white head. Aroma is sweet, malty, honey and light spicy. Flavor is medium sweet and light acidic. Dry and light acidic finish. 300917

Bottle @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are lactose acid, honey, fruits, flowers, malt and hops. Light sour finish.

Floral from both honey & hops. Light herbal grassy hop bite. Nicely dry & very light tart. Perfect carbonation. Good refreshing table beer.

Batch 4 bottle. The beer is a hazy golden color with a medium thick fluffy white head that diminishes gradually to a film. Partial rings of lacing on the glass. Floral and fruity notes with some caramel in the background. Light to medium body with flavors of tart citrus, floral honey, yeast and malt. The finish is fruity yeast and smoked malt. Kind of weird, but an enjoyable beer overall.

750 ml bottle poured into a tulip. Batch #4 bottled on 10/27/2015. Bought from Rare Beer Club during their Jester King sale in February 2016. Clear golden orange with off-white head. Aromas of wine, honey, oak, subtle funk. Tastes of white wine, oak, honey, some citrus, light funk, slight tartness. Light body with a dry finish. Interesting.

Draft @ Rincon Valley Tap Room & Bottle Shop, Santa Rosa, CA. Pours a hazy yellow color with a small white head. Has a fruity malty spicy yeasty honey aroma. Fruity malty spic yeasty honey flavor. Has a fruity malty spicy yeasty honey finish.
