Clara (1906-1969) was our grandfather’s sister; Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this Grisette is crafted from American malted barley, Vermont Organic Wheat, European and American hops, our distinctive farmhouse yeast and water from our well. Unfiltered and naturally carbonated, this is the ale that I dream to have shared with Clara.
Clara is conditioned in barrels until the acid/texture had developed to the point that we like. Sometimes this is 3 months. Sometimes this is 5 months. In the early days of the brewery, Clara was stainless steel (prior to adding puncheons in 2013). Since 2013, it has only been conditioned in puncheons, with a few larger Foudre batches over the years. Ultimately, it is always conditioned in wood.

Bottle @ fonefan tasting. Hazy yellow with a lasting white head. Aroma is sweet, malty, yeasty and moderate hoppy - fruity. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish. High carbonation. Very good for a 4 % ABV beer. 300312

750 growler/bottle-shared by j12601-pours yellow with a disappearing foamy white head. Aroma is dank/barn, light/medium malt. Taste is dank/barn/grassy hops, light/medium malt. Occasional.

75 cl bottle. Pours clear and golden yellow with a huge white head. Aroma mild yeasty, hayish and slight grassy. Smooth orange, peachy and citrusy fruity. Crisp hoppy. Smooth fruity. Crisp hoppy finish.

Draft. A yellow beer with a lazing white head. The aroma has notes of lemons, spices, dusty hops, and newly cut hay. The flavor is sweet with notes of hay, straw, lemons, and dustsy hops, leading to a bitter finish. The body is light.

Bottle courtesy of Travlr, thank you! Poured a slightly cloudy golden color with a spicy, yeasty aroma. Flavor is heavy on the spice and yeast. Surprised by the 4% - pretty enjoyable but not totally my cup of tea.

750mL bottle, sent from gn0sis (thanks Eric), pours cloudy golden with a big white head. Aroma is very funky, with horse blanket, herbs / spices and yeast. Flavour is quite rustic, with lots of barnyard, loads and loads of yeast, citrus and hay. Quite flavourful for being only 4%.

Bottle at Leighton’s Aug 11 tasting. It pours hazy straw yellow, with a massive white head. The nose is white bread, grass, leafy, farmyard, nettles and pepper. The taste is lemon, lime, grass, white farmhouse bread, cornflake, pepper, spice and soap, with a light bitter finish. Light body and fine, foamy carbonation. Smooth, clean flavour, well balanced and easy drinking. Decent.

Bottle at a tasting. Pours hazy, yellow-gold with a huge, pure white head. Mild grass in the aroma, some yeast, light funk. Light sweet flavor, lovely understated sweetness, light grassy bitters. Light bodied with lively and smooth carbonation. Super clean finish, light sugar, good grass, light funk. Extremely drinkable. Great stuff.
