Sweet stouts comprise only a small percentage of the many stouts commercially available. To produce them, grains such as oats and flaked barley are added to provide a soft and full mouthfeel as well as residual sweetness. CaCow! is brewed with those grains as well as lactose, an unfermentable milk sugar (with apologies to our vegan and lactose-intolerant friends!), in the tradition of ‘milk stout.’ This beer was additionally aged with Cacao nibs direct from our friends at Taza Chocolate in Somerville, and house-made vanilla extract to balance the roast with a little extra sweetness. You could, we suppose, consider this the ‘black and white shake’ of stouts!

A deep dark stout with a thin dark brown head. In aroma, sweet butterscotch and chocolate with light milky notes. In mouth, an oily chocolatey taste with nut spread, instant coffee, vanilla, not bad, but a bit cloying. On tap at brewpub, July 1 2010.
