Our first barrel aged beer was inspired by an 1851 recipe from the William Younger & Co. brewery, based in Edinburgh’s Canongate. This strong Scottish stout uses massive quantities of roasted malts to provide a deep character which is balanced by natural malt sweetness. This beer was then barrel aged in an Speyside whisky cask. Bottle conditioned. Drink fresh or age. Slàinte!

Bottle from Stewarts Dockside Tap. Bought six months+ ago and sat on for a while. Pours black with a thin but persistent tan head. Aromas of liquorice, leather, smoke, dark chocolate and coffee. Taste is more of the same, with some whisky and toffee notes on top. Creamy texture, boozy finish.

Bottle shared at BD Castlegate. It pours oily jet black with minimal head. The aroma is sweet, oily, sticky, toasted brown sugars, rocky road, coffee cake, chocolate gateaux, whisky, sticky and fudge. The taste is slick, oily, filthy, vanilla cake frosting, gateaux, coffee cake, treacle, boozy warmth, whisky warmth, tar, boozy heat, chewy action and roasted malt with a slick, whisky finish. Fulsome body and low carbonation. Perhaps could be done with a bit more carbonation, but enjoyable nonetheless.

Black beer, light brown head. Smells of malt and chocolate. Big hefty flavour of toasty malt, chocolate, a little dried fruit and caramel and a perfectly balanced whisky hit. Just enough for it to be distinct but not so much for it to be a boozy mess. And a bit of a toasty aftertaste too with the scotch. Lovely stuff.

On cask at the Hanging Bat. Appearance - jet black with the look of crude oil. Thin fawn head. Nose - treacle cake. Brown sugar and dried fruit. Light whiff of booze. Taste - more treacle, raisins and prunes. Dark chocolate and something savoury. Palate - medium to full bodied. Rich and creamy middle. Long elegant finish. Overall - lovely stuff.
