Then You Roast the Mallow is an imperial stout brewed with a touch of lactose in the kettle and boiled for multiple hours. Post fermentation we steeped the finished beer on graham crackers, marshmallow and cocoa nibs which lend to the overall sweetness, but impart flavors of baker's chocolate and roasted liquid marshmallow. Drinking this beer reminds us of backyard baseball games, summertime pool visits, and Benny the Jet Rodriguez

Pours viscously as motor oil to a few seconds of tan head, making way for brown-black opaque beer. Coffee, roast, roasted nuts, waffle syrup. Bitterish - from the roast - over sweet dark malts' jumble. Some resin all the same and cacao powder for the winter cup. There is a slight sourish impression, as from gooseberry. Aftertaste sports black chocolate. Obviously full bodied, viscous, rich. Good carbonation and furious alcoholheat. Classic. Txs to Stef!

Can at home, from Libeerdade Lisboa, 01/04/22. Black with a good sized tan covering that dissipates edgewards and to a thin swirl. Nose is chocolate, dark malts, molasses, toffee fudge, spice, light cinnamon, smores. Taste comprises sweet malts, chocolate, Golden Grahams, molasses, brown sugar melt, crunchy nut cornflakes. Full bodied, fine carbonation, semi drying close with a balanced rising boost. A touch on the sweet side but sips well for the high boost ... fun pastry affair.
