Produced at most once per year in very limited quantities, Slow Donkey has earned its moniker. Each version, barrel aged for 10-14 months (either in oak or acacia barrels in which Vinsanto wines were aged, or oak barrels that previously held raki), is completely distinct from its predecessors, and provides an opportunity for our team to experiment with different varieties of malt and hops.
Bottle conditioning provides the secondary fermentation and allows a multitude of flavors to develop. Best served at slightly higher temperatures than our other ales, so you can experience how the aroma and taste changes over time.
A very limited edition ale, available only in the brewery shop.
Alc. 9.0 - 10.0% vol. //
IBU 40 approx.
