A unique and first of its kind project, Simmer Dim is the first beer in the United States to be aged in scotch whiskey barrels from Highland Park Distillery located on the island of Orkney in Scotland. This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whiskey. During aging in the oak, which formerly held Spanish sherry before Highland Park, the beer develops intensely rich attributes resembling toffee and dried fig and date. The peat smoke of the scotch imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat.

Medium brown. Aroma shows fruity depth, with a good scotch nose, light peat, fruits. Light fruitiness, solid highland park influence. Well-balanced, the way the big fruitiness plays against the burly whisky and that slight smoke/peat thing comes in at the end. Definitely some cool shit.

375mL bottle, pours a deep dark mahogany/brown with a tiny head. Aroma has plenty of oak, dark dried fruits, some dry toffee, and bready caramel. Flavour is complex, with plenty of slightly smoky whiskey barrels, toffee, dark dried fruits, and bready caramel. Real nice whiskey barrel, with just enough smoke. Excellent.

Poured from 375mL bottle. Dark copper brown with minimal off white head. Dry-ish dark dried fruits with gentle scotch with a touch of sherry, decent.

Bottle pours out amber color topped with a sand head. Nose is sweet caramel toffee malts barrel vanilla. Taste is more of the nice sweet malts caramel toffee barrel goodness wow.

Draft. Mahogany-brown beer with a tan head. Toffee and caramel aroma. Dried fruit and toffee flavor with caramel and dark fruit. Medium bodied. Dark fruit and toffee linger with caramel.
