Questa birra, come suggerisce il nome, celebra il compleanno della nostra cantina brassicola.
Tale ricorrenza avviene in inverno, abbracciando un immaginario favolistico sotteso dai sussurri del freddo, intriso di leggende selvagge e di misteri boschivi (la nostra bottaia si trova al limitare dell’apppennino bolognese).
Per festeggiare l’Anniversario 2017 abbiamo deciso di realizzare una sour ale connotata dall’infusione a freddo di Tè Pu’er dopo una fermentazione primaria con Brettanomyces Lambicus e affinamento in foeder con l’ambiente batterico sviluppatosi nel legno.

Tasting glass @ Billie’s Bier Kafétaria. Hazy orange, small hazy white head. Nose is funky apricot, some vinegar, glue, funk, Pu’er tea is low luckily since I am not a fan of Pu’ er tea. Taste is all glue paint, vinegar, acidic, paint, harsh all glue vinegar harsh, too much in that profile with low fishy Pu’ er tea minor almost lost in the back. Thicker glue & white bread paint body. Not a fan of this overly paint & vinegar taste, not a huge fan of this brewery / blender in general.

Tap at Ma Che Siete Venuti a Fa in Rome-Italy. Orange bright color with a medium white foam. Nose: citric, champagne, firm funky with thyme and rosemary. Mouth is lovely, fruity start with a frizzy peppery fine finish. What to say??? Top

From the tap at Il Punto, Bologna, Italy. Pours medium transparency gold with creamy white foam, medium grain. Aroma is balsamic, grapes, very ripe fruit. Body is velvety, somehow dense, with moderate carbonation. Taste is moderate in sweetness and with a very pleasant sourness. Finish is not particularly long.
