To celebrate opening distribution in Tennessee we got together with friends at Jackelope Brewing Company in Nashville for a beer collab! Together we decided to merge local TN honey and PA malted rye from Double Eagle Malting Co into a Farmhouse Ale with Loral hops. Hints of spice from the PA rye and French Saison yeast balances out a subtle floral sweetness from the TN honey. Yum!

Not a bad saison, hitting all the notes you want from the style--clove, straw, grass, mild floral bitterness--with the nice bonus of spicy rye adding complexity to the back end. Honey comes on a little too strong, though; the finish takes on a heavy sweetness, one that grows considerably as the pint warms. I'd love to try a version of this pint sans regurgitated bee enzymes, but, as is, Rocky Top's a bit heavy-handed for me.
