All That I Am is the puncheon-fermented version of All That You Are, our spelt mixed-fermentation Saison. Puncheons are larger than the wine barrels we normally use for wild beer, leading to a slower maturation and more refined final product. This one aged in the puncheons for 18 months and bottle-conditioned for 9 months. Nice mineral character, bright juicy pear, dried orange peel, delicate aromatics of vanilla and fresh flowers, and an elegant restrained funk and acid profile.

29/4/2023. Bottle shared by Colin, cheers. Pours clear dark gold with a small bubbly off-white head. Aroma is funky, straw, musty, woody, yoghurt, red wine, herb. Medium sweetness, moderate bitterness, light tartness. Medium body, oily, soft carbonation. Enjoyed this.

Panda 🐼 at home big thanks to Colin. A clear golden coloured pour with a halo of white head. Aroma is bretty funk, lemon rind, vanilla, woody lactose, dry funk. Flavour is composed of semi sweet, woody funk, lemon balm, lemon rind, floral , lacto, vanilla, damp wood. Palate is tart, semi sweet, oily, fine carbonation. Little buttery, american sour, Not a huge fan.

Bottle at home, from an online peddler whose name I can't recall - probably Cloudwater, 21/02/23. Clear golden orange with a decent white cap that dissipates to a swirl. Nose is funk, vinous, damp straw, hedgerow, green berry must, damp oak, light acidic nostril twinge. Taste comprises hay bale, light acidity, green apple, floral notes, herb, vanilla oak, stoned fruit esters, guava, light funk. Medium bodied, fine carbonation, semi drying close with a modest puckering kiss and light acidic rise. Solid work ... well balanced and flavoursome stuff.
