Version 12. Blend of the best barrels (between 1.5 and 4 YO), usually twice a year. Still partly fermented with project X: microbe strains collected from a wasp's gut. Complex and balanced. Round yet almost no residual sugars.

Small off-white head, soon reduced to rim; hazy orange-ocherish beer. Vinous, red fruit, lactic acid, lemony. And lambic-y. Fruity sourish flavours, lactic acid, lemony, sour oranges. Getting some wheat too. Lipsmacking acidity, acidthinning and -burn. Tart as none, but the acidity never becomes agressive: bonus! Wow, this is more than impressive. We were really amazed, my co-taster dubbing this as Swiss lambic!

hazy orange colour, practically no head; aroma of acetic and citric acidy, woody, tannins and some unripe fruity notes; taste is quite the same; good one

0.75l bottle thanks to Lore. Hazy orange body with a white head. Aroma and taste of lemon zest, vinegar, peach, wood and grapes. Not so funky but rather sweet and sour. Nice one.
