Brett IPA fermented w/ blend of Chico Ale Yeast and Brett Claussenii (aka Brett C). Brett C offers tropical pineapple alongside a more subtle character of leather + earth. ALS hp blend used consists of mostly Equinox + Mosaic w/ smaller amts. of experimental hops.

Draft. Amber beer with a cream head. Brett and citrus aroma. Brett and spice flavor with citrus and earthiness. Medium bodied. Decent bitterness. Brett and light spice linger with citrus.

From a growler courtesy of that popery guy. Aroma is dank with some onion and garlic notes, but there is also a moderately strong tropical fruit presence with mango and pineapple. Some light stone fruit notes with a medium light calamansi note. Medium light cracker malt notes as well. Pours a hazy, bright, golden color with a medium large, slightly off-white, thick head that exhibits decent retention as it slowly recedes to the edges. Moderate lacing with medium small legs. Flavor is slightly sweet with a bit of cracker malt notes, with a bit more fruity sweetness mid palate. Finish has a medium high bitterness with some lingering cracker notes. Strong hop notes, mostly dank with some onion and garlic. Fairly strong pineapple and mango as well with lighter guava and melon notes. Some light stone fruit skins and light calamansi. Mouthfeel is medium bodied with a dry finish and medium high carbonation. Low astringency and low alcohol warmth. Overall, this is a stupidly delicious IPA. Nice balance of dank and fruit with a dry finish and good cracker notes.

The beer is a medium orange yellow color. It’s completely clouded over, so things are looking up already. Medium white head. Plenty of lacing. The aroma is full of juicy, super fruity hoppiness. Big pineapple, mango, peach, grape, lemon, guava, papaya, other good stuff. A little bit of earthy, yeasty flavor in the mix. Everything is pleasant and sweet. Taste is pretty dry. Mild to moderate bitterness. Super easy to drink. Lots of hop flavor. Just tons of juicy fruit. Solid mineral note. This is how I want my hoppy beers, and I wish Cellarmaker would stick to this mold even more often. Mouthfeel is soft and dries out perfectly with a light chalky quality in the finish. Normal carbonation. Fantastic beer.
