Hop sourcing is not as straight forward as it might seem; especially for a brewery as small as Cellarmaker. Everyone loves Simcoe hops, but Simcoe isn't Simcoe, isn't Simcoe. There are many different farms & there can be variation (farm to farm & year to year). This batch of Simcoe Sessions employs a single lot of 2017 Simcoe from Washington.

Tap as part of a sampler at the brewery. Aroma is beautiful simcoe, also one of my favorite hops to brew with! Grapefruit and citrus dominate, and slight cat piss in the backing. Hazy yellow with full white head. Taste is overt citrus. Less dominate than the aroma but still a very nice beer. A great session.

Draft. Amber beer with a cream head. Light grapefruit and light earthy aroma. Grapefruit and pine flavor. Medium bodied. Grapefruit and light pine linger.

[2/15/15] Draught at Cellarmaker in San Francisco. Nice hoppy aroma with lots of overripe canned tropical fruits. Dry flavor with fruity hops and some graininess. Medium-bodied.

Half pint draft at the brewery tasting room in San Francisco, California. The pour is mostly clear golden yellow, with a ½ inch white head that is lasting. The aroma is lemon and orange citrus, pine, and mango fruit. Clean engaging nose. The taste is balanced between clean fresh cracker malt and the bright hop notes of the nose - lemon, orange, mango and the taste reveals some grass and resin. The palate is light bodied, fine active carbonation and dry clean finish. Super drinkable beer, tasty.

Pours a bright orange-ish yellow color. Moderately hazy. Medium-sized white head, lots of fine bubbles. Good retention, etc. The aroma is all hops. It’s more tropical than I normally think of Simcoe hops. Mostly pineapple and tangerine. Some peach, mango, passionfruit. A little bit of pine. Very clean with some nice acidity. Taste is light, clean and hoppy. It starts with some pale malt sweetness, just a smooth simple sugary background. Then, the hop flavor comes in with more pine and grapefruit than the aroma but an otherwise similar profile. Moderate bitterness closes things out. A little bit grassy in the finish. It was just put on at Cellarmaker a couple days ago, so this is pretty fresh, and it’s a tasty, refreshing glass. Pretty dry. Lots of hop flavor but not overwhelming. Light feel. Nice hop bite at the end further cleans up and already clean flavor. Easy to drink. Very good hoppy pale ale. This stuff would sell fast in six packs.

Pours yellowish orange with a smooth head. Aroma of fresh exotic fruits, grass, citrus, zesty hops, pine and grapefruit. Taste is smooth, juicy hoppy and grapefruity with nice exotic fruity notes. Finish is bitter, hoppy and a bit stuffy. Pretty good single hop APA.
