The key to a chocolatey milk stout, in our opinion, is to use Pale Ale, Roast Barley, Black, Crystal and Chocolate Malt, but also to use a fair amount of Munich, which rounds everything out nicely.

Bottle at home. Bought at Inn At Home, Guildford. Sweet aroma - reminds me of cheap chocolate and mocha. Dark and glossy appearance. Loses a point for the rapid retreat of the beige head. Sweet with a bitter finish - somewhat subdued. Getting malts, coffee berries and some chocolate but not much impact. Smooth bodied. Soft mouthfeel. Dry finish. Goes down well but only the bitter finish has any vigour.

Cask at the Prince Arthur (JDW), Fleet. An attractive opaque reddish mahogany pour with a tight tan head; fruity coffee bean aroma; smooth and sweet with a milky body, some nice crystal malts and brown sugar; then a dry lactic finish with some caramelised nuts. To me, this is more like a dark mild than a milk stout - I’m also puzzled by the absence of the expected chocolate.

Bottle from Cotteridge Wines, Birmingham. Poured a clear dark brown with a round bubbly off white head. The aroma is smooth dark chocolate. The flavour is moderate sweet with a smooth, hop bitter, light chocolate, liqourice palate. Medium to full bodied with average carbonation. A little too much life for a milk stout.
