This double IPA is the result of experimentation with Polaris, a new (to us) hop variety and a couple malts we’ve never used before. The resulting beer showcases slightly more caramelized malt character than some of our other hoppy beers, and a focus on the strange but exciting high alpha acid German hop.

What it smells like, what it tastes like

Lots of citrus fruit up front and a medium bitterness with hints of cucumber and mint. Strong, savoury finish.

(500ml bottle at almost 2 months old) Pours medium orange with dense white lingering head and lace. Aroma sweetish and malty, dried pit fruit, caramel, coconut, herbal spicy peppery hops, citrus. Flavour of mid-sweet juicy tropical fruit, pineapple, citrus, some caramel. Finish is somewhat bitter and grassy, both fresh and somewhat spicy. Medium bodied with fairly high carb. No alcohol. Still get some unusual notes here but it feels like Citra is showing through a bit, shared it with someone who said it was nicer aged than very fresh. Not bad at all if a touch odd.

500mL bottle, sent from wilco (thanks a lot, Mike), pours a hazy amber with a medium white head. Aroma brings out lovely resinous and piney hops galore upfront, and a fairly prominent caramel malt backing. Flavour follows suit in the way of an impeccably balanced double IPA, with heaps of piney and resinous hops, without the astringency, and a big caramel bready malt backbone that isn't very sweet. A hearty, chewy palate that is about as perfectly balanced as you can be. A double of elegance. Fantastic.

So off to Bellwoods I go to get some Donkey Venom. (Week four of the month of barrel beers.) And there is a completely new beer. (Love it when I try a new BW beer, and being a first is a plus.) Pours golden and clear with a dense soapy head that sticks around. Smells heavy of hops, resin, perfume, a little of the weed. Really nice taste. Same big hops of perfume and flowers, a little resin and a little weed, and some pear. The malt leans toward cereal with an almost too sweet background, but it works, really nicely. Overall a really tasty brew. For an experiment in a new (to them) hops and malts call this one a success. Buy some on your way to get some Donkey Venom.
