Cab sauv barrel. Flat, dark amber colour. Has a lot of brett on the nose, with some vinous, barrely notes. Sweet, balsamic, heavily woody. Touch of brett. A bit slick. Some mapley notes, which are distinct but totally out of context. A chocolatey note is the same. Hmmm. It’s kind of a mess, but unique and there are things on offer here.

On tap at Bomber, pours a deep dark mahogany with a small beige head. Aroma brings out rich red wine barrels, lovely tannins, a little brett, and grape must. Flavour is complex and wonderfully rounded, with a great mix of grape must, brett funk and red wine barrel. What a happy mistake this turned out to be. Apparently, this was supposed to be a red wine BA barley wine, but turned sour and was remediated with brett, further wine barrel aging and grape must. Excellent stuff.

Dark brown- red color with no head, like a vintage wine. Vinous aroma, infinitesimal acetic, vanilla and tobacco. Good mouthfeel, lean, not too thick; the malt base is good, it’s not too strong, it has some caramel; the Brett blends very well with the wine barrel and the fruity, it’s tart and juicy, woody, moderate astringency in the final; hints of vanilla and butter.
I get the feeling of an improvised dish that ends being an excellent dinner. Very nice. More, please!
