Oak fermented saison aged on grapefruit zest. This saison was brewed with pilsner malt along with malted and unmalted rye. It was hopped in the kettle with Simcoe and Hallertau Blanc and fermented with a blend of saison strains in an oak foudre. The beer was then transferred into oak puncheons and aged on fresh grapefruit zest and juice and dry hopped with Simcoe.

Draft pour at Holy Mountain. A shiny golden pour with a ton of oily foam head. A bright fresh citrus aroma, with a slight tart impression. Favor is a slightly tart, slightly bitter, but full refreshing. Turns a little dry, but doesn’t take away from the refreshment. Makes me want more of it. True grapefruit constant. Very good stuff.

On tap at Holy Mountain, pours a cloudy golden yellow with a small white head. Aroma brings out light citrus, saison yeast and biscuity malt. Flavour is pretty light on the grapefruit, with lots of saison yeast, moderate citric notes, finishing dry and light funky. Nicely made.
