Solo Batch 2 is a single barrel bottling of old saison that we thought displayed exceptional balance all on its own. Bottled with modest carbonation and receiving only a gentle dry-hopping with Saphir hops, we think Solo is a great expression of our house cultures over time. Simple, elegant, refreshing.

Hazy yellow. Thin head. On the nose, there’s a nice brett C character. It’s drier than the first batch, with less pedio, and it finishes nicely in terms of yeasty, dry, and a hint of brett. Solid.

Tasting at Oakes' Manor, bottle
Cloudy pale blond colour with almost no head. The aroma is mildly funky and citrusy. Very high carbonation, dry, with some funk, and some vegetables. I would dare saying that the fermentation went sideways, and there was even some unwanted refermentation in the bottle.
Not very good.

500ml bottle at Josh's. Pours a cloudy blonde with a white head. Aroma is rustic with fruity and barrel notes. Taste is similar. Pretty good.

375mL bottle, pours a cloudy yellow with a small white head. Aroma brings out a nice funky farmhouse character, with tart citrus, and some oak. Flavour is along the same lines, with barnyard funk, muted champagne notes, and light oak. Highly carbonated, with a funky, oaky finish. I prefer Batch 1.
