This is our third edition of Saison Cider Cask. It is always fermented in freshly emptied cider barrels, with a mixture of our spontaneously collected house culture and any remaining lees from the cider making. This edition is a blend of five barrels (from four brews), produced in September 2019, April 2020 and December 2020. The contrasting brews used a variety of grains and a mixture of aged and fresh European hops. Fermentation took place in fresh cider barrels from Oliver's Cider and Perry, as well as Ross-on-Wye Cider and Perry Company. The finished blend was dry-hopped with 2021 season Celeia, before conditioning in bottle for two months prior to release.

Telfords 040924. Golden-orange color with a white head. Aroma is farmhouse, yeast, apple. Flavor is farmhouse, yeast, apple, acid, funk, lemon, grapefruit, apple, yeast. , spices. Nice beer.

Bottle, 75cl, at Telford's. An unclear orange colored beer with a dense, finger-thick white head. Some lacing. The aroma has a nice funkyness, leather and barnyard, with lemon and a touch of grapefruit. Apple hints and some pale malts. It's medium bodied and dry on the palate, with tannins and a nice carbonation level. Funky, fruity flavor, with apple notes, peppery, yeasty hints and some pale malts. Woody notes. Lasting finish with some gooseberry added. A typical Saison, but with a funky twist. Delicious indeed. 240904

Bottle from the source, brought to my door by the trusty delivery person, thank you sir. Clear bright golden color, huge fluffy white head with amazing retention and solid lacing. Aroma of lightly dusty overripe apple flesh. Taste is lightly sweet applesauce, light lemon, light vanilla, vinous finish with subtle funk. Very tasty yet easy drinking.

Bottle. Mills online. Light haze on a medium gold. Thin white foam is lasting and semi lacing. Nose has wheat. Cider dregs. Bretty oaky leathery notes. Taste is fairly sweet first off with light brett bitterness. Clean easy drinking with foamy carbonation. Bit of juicy bitterness to finish.
