To mark our hosting of Cory King of Side Project Brewing for our Harvest Festival, we will officially debut a beer nearly a decade in the making.
During the 2017 Festival of Farmhouse Ales, a few of our guests joined us in a creative collaboration: Sante Adairius Rustic Ales, Side Project, and Tired Hands. Together, a Farmstead® ale was crafted with organic flaked corn, organic spelt, and Vermont knotweed honey, and then rested in wine barrels for ten months. Packaged in 2018, this bottling has been part of our ongoing extended bottle-conditioning experiment; a draft version debuted during the 2024 Festival of Farmhouse Ales.

Fofa draught, 8/2/25.
Clear deep honey. Firm, medium-dense, white head.
Soft, with floral accents and well-aged mixed culture. Flora-like, though with maybe a more sweet, rustic grist character. Rich and bright.
Tart, bright, malty, with sweeter corn notes, perhaps, but balanced by a bold acidity and very fruity Brett. Despite it's age, it still feels a bit brash/young. Love the maltiness, though (and other adjunct grains).
