Our malting partner at Skagit Valley Malting has released a Bohemian Pilsner malt varietal. When the staff is obsessed with Czech Pilsner, you go ahead and drop everything to schedule using it. The malt seemed perfect to chase an idea of forgotten lagers. Rustic and character-driven lagers reminiscent of historic brewing ingredients. We used one of the older overlooked hops, Spalter. Beautifully floral, it works so well with German spelt malt. To add one more layer of Matchless, we used a Canadian lager yeast known for accentuating malt complexity. The end result is a lavender floral character from the hops and crisp cracker bread from the spelt and pilsner malt. We haven't forgotten great ingredients and techniques.

16 oz. can, pours a hazy golden with a small white head. Nose is full of grassy hops, crisp crackery malt and some biscuity malt. Flavour is bright and grassy, with spicy, grassy hops, herbaceous notes, and crisp biscuity malt. Bright and grassy. Really good pils.

Fairly pale, slight haze. A thin head. On the nose, it has a nice fresh pale malt character with herbaceous hops...yet does seem quite American at the same time, maybe yeast. Has a moderate bitterness, a decent pale malt note, and the hops are still herbaceous, though not abundantly characterful. Decent new world pilsner.
