Foudre-aged Brett DIPA
Chaotic Attractor was brewed with Two Row, Pilsner malt, and a large portion of oats and flaked barley. It was hopped aggressively with Citra, Mosaic, and Simcoe, and fermented in stainless. Once primary fermentation was complete, it was transferred into one of our oak foudres, where it continued to condition with a house Brett culture for 4 months. Finally, it was dry-hopped with large quantities of Citra, Mosaic & Simcoe.

Taster. Appearance: hazy golden with a white head. Aroma: lots of brett, a bit fruity. Taste: along the same lines, very fruity and juicy, even a bit sweet. Overall: very nice!

On tap at Holy Mountain, pours a cloudy pale golden with a small white head. Aroma is loaded with oak, bretty funk, and gently dank hops - what a complex nose. Flavour is very complex and elegant, with beautifully integrated parts of dank citrus hops, farmhouse funk, and oak barrels. The brett and oak contribute a beautiful character. Lovely.
