Our favourite saison recipe co-fermented using two house cultures and native, wild yeast from 700 lbs. of Muscat clusters from our friends at Poplar Grove Winery. Fermented and aged for over 5 months in Foeder #2 before this beer was ready for bottling. Developing a deep tannin structure from grape skin and stem contact that compliments our house culture’s natural acid production and soft malty sweetness. This saison was lovingly conditioned until perfect.

Poured from the tap. Hazy gold with white head. Mild yeast, grape skin, touch of funk. Fairly mellow, decent.

Corked bottle from The Gull, North Vancouver
Hazy blond colour. Nice aroma, light funk, delicate white grapes. Soft mouthfeel, not too dry actually, good balance of flavours, fruit, funk, citrus hops, with mild astringency.
Very good.

Palish amber, has a light tartness, but it's a touch wonky, with a hint of vinous accents. Not half bad, with a mellow vinous know. So it's not bad.

750mL bottle, pours a hazy golden blonde with a small white head. Aroma brings out farmhouse funk, brett, grape skins, and cereal grains. Flavour is quite grainy, with lots of wild bugs, rustic saison yeast, and some musty grape skins. Grainy and buggy, with fairly low carbonation. Pleasant.
