Celeste is a blend of tablebiers. 50% of Celeste was fermented in stainless with a blend of saison and Brettanomyces strains, while the other 50% of Celeste was fermented in oak barrels with a house mixed culture. Celeste was then aged on fresh Okanagan Cresthaven peaches for two months, and bottle conditioned with Brettanomyces.

On tap at House of Funk, pours an opaque peachy blonde with a small white head. Aroma is very muted, with peach fuzz upfront and little saison yeast or funk. Flavour is a little less muted, with tart peaches, a little rustic character and oak. Dry and muted. Could be executed much better.
