Many, many, (many) moons ago, the folks at Burdock set out to make a beer with their kitchen's sourdough culture. They added corn and spelt to the beer giving the yeast something to chew on as it lay in barrel.
The beer was delicious - wide texture, bakery aromas, but lacking in acid.
Burdock dialed our direct line (411-ACID) and we accepted the challenge. We tasted through almost every tank in the cidery but came to the conclusion that what we really craved was simplicity.
With our new mantra of 'be chill' we resolved that 50% of the blend would be a simple cider, aged on tannic apple pomace.
After over a year of conditioning in bottle, REVDOCK has achieved its destiny. In a mashup of bakery meets forest floor, this blend fuses the best of old world sparkling, velvety wood and apple skin contact.
It is funk, refined.

Tasting at Phill's, bottle
Pale blond colour, hazy. A bit farty, moderately acidic, the apple character is poor, but the fermentation profile is good. Off-dry.

750ml @ Phill's. Appearance: hazy blonde with a white head. Aroma: manur notes, some wild yeats, fermented apples. Taste: along the same lines, quite dry and funky. Overall: pretty good, but as usual in such stuff I would prefer more residual sugars.

Poured from 750mL bottle. Hazy, pale yellow with quickly dissipating white head. Sourdough, funk, apple skin. Quite nice.

Cloudy and pale green, just a bit of haze. No head. It's appley and with a bit of bugs and barrel. On the palate, definitely a barrel, fairly appley, and a bit of tartness. Light, tart, refreshing and subtlely complex.

750mL bottle, pours a cloudy yellow with a small white head. Aroma is loaded with farmhouse notes, some barnyard funk, and some citrus zest. Flavour is full of sourdough culture, barnyard funk, farmhouse notes, and dry apple skins. Dry, funky, sourdough finish. Unique; really nice.

(750ml bottle from the Revel webshop) Pours nearly clear straw gold with an average sized but fading white head. Notes of cereals and dough with pronounced sourdough acid profile, deep tannic apple skin earthy undertones gives a clear skin contact base, some soft funk, balance is light to moderate acidity with dry tannic rich apple skin finish and some wood and dusty yeasty overtones to the aftertaste. Light to medium body with rather soft carbonation. Softer in some ways than a typical cider, with its pronounced sourdough and cereal half, but firmer as well thanks to stronger skin contact. Nose is a bit restrained.
