Rustic Berliner
Tart, Citrus, Gooseberry

A malt foundation created using traditional, old world techniques to develop a complex substrate for one of our house cultures. Using a multi step mashing process the wort was collected in the kettle but never boiled. We transferred this rustic, protein-rich wort to Foeder #1 with a mix of yeast and bacteria. Fermented and matured in oak before finishing in stainless, and dryhopped with Hallertau Blanc and Motueka, this beer is bright and tart with notes of lemon and white wine.

On tap at 33B, pours a clear pale golden with a small white head. Aroma brings out plenty of wild bugs, with a little oak, and some gentle dry hopping. Flavour is very buggy, with lots of wild yeast, some lacto, rustic notes, and moderate tartness. Nice to see a classic Berliner amidst the sea of lacto ones. Very nice.

Poured from the tap. Clear straw yellow with white head. Mild white wine and lemon with a light, but lingering buttery tartness.
