We combined 40lbs of pacific coast cranberries and 100lbs of pacific coast raspberries and let them ferment using a technique traditionally found in wine making called carbonic maceration, which allowed the fruit to ferment in an anaerobic environment resulting in increased aromatics and tannin breakdown. After one week we added an additional 80L of raspberry purée along with two barrels (450L) of our base beer, a 1.5 yr neutral barrel aged Wild Sour that was fermented with our house mixed culture, and let it continue to naturally co-ferment for and additional 2 months. We then racked the beer off of the fruit and let it condition for 5 months before bottling.
The long fruit contact allowed for the cranberries and raspberries to break down and invoke a rich, bold, sweet berry characteristic to this beer that is beautifully balanced with a bright and complex acidity.

Purple, not much head but it looks good. Aromatic raspberries on the nose. On the palate, it's quite tart, with lots more raspberries, and a slight bugginess.

Poured from 750mL bottle. Hazed bright purple red with small white head. Lots of raspberry on the nose that permeates out as soon as you crack open the bottle. Cranberry and raspberry taste. Really nice cohesive stuff.

750mL bottle, pours a rich dark red with a small white head and a shitload of unappetizing chunks of yeast. Aroma brings outs lots of wild yeast, some tart cranberries, and raspberries. Flavour is rich and complex, with lots of raspberries upfront, some tart cranberries, and some nice wild bugs. Really nice buggy character and the fruit -- particularly the raspberries -- adds great depth. Excellent.

Draught at the brewery
Cloudy dark red colour. Aroma of strawberries, vinegar, balsamic. Tart, very aggressive, cranberries, juicy, limited acetic. Not complex, but bold.

A taster from the bottle shared with Alex (f@ck you COVID) during the 1st day of TS anniversary. Appearance: hazy purple with a rose head. Aroma: lots os raspberries with some sweetness. Taste: omg, an acid kick right in my mouth with lots of raspberry and some cranberry notes. Overall: too acidic for me, but a load of berries helps a bit.
