Derived from Marlborough Sauvignon Blanc grapes, Phantasm is a powderized product that Jos Ruffel (also cofounder of Garage Project) worked to create. It’s naturally high in thiols, just as hops are, and these chemical compounds serve to enhance citrusy and/or tropical hop aromatics in beer. We were invited by GP to utilize Phantasm and report back on our findings, so consider this latest DIPA a form of sensory evidence! In it, we were able to boost the Mosaic and Motueka hops to new heights, depths, and dimensions.

Can, courtesy of Sergey
Murky blond colour. Aroma of grapes, manure, zest. Lean, with little residual sweetness; a bit more acidic than expected, fruity, zesty.
Good, but the acidity is quite weird.

473mL can, pours a hazy golden yellow with a small white head. Aroma has a white wine character to the hops — lots of tangy citrus hops, with some dankness, and a biscuity malt. Flavour is tangy, revealing that NZ-style white wine hop tanginess, a touch of dankness, and just enough sweetness to balance. Tangy finish with superb balance. Excellent.

Pale and hazy. Lots of big fruity hops, that vinous note...brother from a different mother I guess. A bit weedy,, the malt is okay and then there's a pretty big alcohol kick to it as well. A burly example but not bad.
