Helsar is a saison infused with cascara from Costa Rica. Cascara in Spanish means "husk" or "shell", and is used to described the dried skin of the coffee frit that has been removed during depulping and discarded. Fermented with our house blend of wild and feral yeasts and bacterias.

Vintage bottle pour. Pale amber, thin bubbly head. Light fruity aroma. The aroma has bigger fruitiness than is expressed on the palate. Good malt base, decent body, slight tartness. Comes across bright but without the complexity that they've nailed in the past couple of years since they made this.

Aroma is quite nice with pleasant farmhouse notes. Taste is along the same lines, but more muted and maybe faded. Quite low carbonation. Still pleasant.

375mL bottle, pours a cloudy golden orange with a small white head. Aroma is very husky, with earthy notes and rustic saison yeast. Flavour is quite tart and very husky, with a rough earthiness from the husks, rustic saison yeast, some bugs. Very earthy, somewhat lemony, husky finish. Very interesting.
