This beer began in the Winter of 2020 with a base of spontaneously-inoculated wort brewed in the methode traditionnelle and fermented in freshly-emptied cab sauv puncheons. In the Spring of 2021, it was blended with a saison brewed with aged hops that spent 36 months in freshly-emptied pinot noir barrels. Naturally-conditioned in the bottle with brettanomyces.

Earthy bretty lambicy tasty. Pale colour, slight haze, medium head. Mellow barrel, rounds out the wildness. Not even sure I get much vinous character.

375mL bottle, pours a hazy pale golden with a small white head. Aroma is like a mix of pseudo-lambic and saison, with rustic saison yeast, funky critters, and some barnyard funk. Flavour has some low level phenols, rustic saison yeast, light bugginess, and a little oak. The phenols, though subtle, are distracting and detracting. It's decent, but far from excellent.
