Somewhereness is the first release from this new chapter of my mixed culture beer program. It's also the first in a series of barrel fermented and aged saison, a fitting introduction to this new era of Temporal beer.
Batch One of Somewhereness was brewed about a year ago with a mix of estate-grown undermodified pilsner malt, wind malt, and a bit of malted red spring wheat from @meccagrade in Oregon. The mash was padded with Kentucky Bluegrass straw grown on the same land as the barley, acting as a natural filter during vorlauf and lauter.
Somewhereness B1 was hopped in the kettle with a healthy addition of Czech Saaz, and fermented with the wild yeast and bacteria that happen to live within barrel #22 - a neutral French oak cask I've been producing beer in for almost 5 years!
The idea with Somewhereness is to convey what terroir can look like in beer. To merge dry, refreshing, highly carbonated saison with an ingredient-driven approach. There's something to be said for barrel fermentation - yeast behavior can be effected by the geometry of the fermentation vessel - as well as a long stint of horizontal bottle conditioning. Something to do with surface area : volume ratios but also a little bit of magic and patience.

Bottle, Temporal Tasting
Blond colour, cloudy, medium sized head, good retention. Nice aroma, there's some malt, some bugs, gentle fruit, mildly floral too. It's very smooth, perfect level of carbonation, therefore it doesn't feel too dry; malt backbone, chewy, with interesting, complex yeast profile, and bold bitterness; delicate fruity touch, stone fruits; it finishes much drier, but still well structured. Aroma is better than flavour.

Re-rate: Poured from 750mL bottle. Hazy gold with small white head. Buggy, rustic, wild yeast, gentle tartness, nice complexity. Enjoyable. Aug 06, 2022 (from notes; 7/4/8/4/16): Poured from bottle @ FHF 2022. Clear-ish gold with small white head. Light oak barrel, very feint peach, rustic, lightly tart, very nice.

750ml (thx, Tristan!) shared with Ryan @ Alex's garage. Appearance: hazy straw with a white head. Aroma: bugs, rustic notes, some fruitiness (like grapes), barrel, very nice. Taste: along the same lines, quite hoppy, with a nice rustic notes, though. Maybe a bit watery. Overall: reminded me Belgian style saisons (which I am not a huge fan of due to a hoppy bitterness) with added complexity from barrel aging, pleasant.

750mL bottle, pours a hazy golden with a large white head. Nose is buggy and rustic, with lots of barnyard funk, rustic saison yeast, and toasted grains. Flavour is bright and lively, with lots of rustic saison yeast, plenty of bugs, toasted grains, and oak. Lively carbonation that accentuates the excellent yeast profile. Excellent.

Pale amber with slight haze, fairly thick head. This is oaky, lightly tart, wheaty and yeasty. Nice complexity and drinkability.
