Phantom Lake West Coast IPA - Episode II - is the second of our rotating west coast IPA series. We brew a base beer, generously hopped to provide a firm bitterness and ferment with a clean, lightly fruity yeast.

Episode II is dry-hopped with Sabro & Talus.

Sabro imparts a complex fruit flavour, notable for it’s citrus attributes, including tangerine, coconut and stone fruit. Secondary flavours include vanilla, cedar, dill and mint.

Talus delivers aromas of pink grapefruit, citrus rind, dried roses pine, tropical fruits and sage.

Pale amber, oniony sort of aroma but on the palate there’s some stone fruit as well, apricot mostly. Sticky malts but also medium bitterness. Still quite sulphury.

On tap at the Alibi Room, pours a clear pale golden with a small white head. Aroma brings out bright piney hops, a hint of citrus, and crisp crackery malt. Flavour is crisp, with a nice piney hop character and crisp crackery malt. I don't get any butter thankfully. Crisp, biting and dry finish. But it's just really timid. Meh.

Blond colour, darker shade of blond, with just some chill haze, otherwise it's quite clean; medium sized head. Delicate aroma, more fuity than piney, it seems sweet. Medium body, lean, with light residual sweetness; I appreciate that the malts are not sticky, on the other hand, they are not adding much either; the hopping is ok, balanced bitterness and timid aromatics, piney resins; but there is also, quite clearly, some butter here.
I'm not a diacetyl nazi, so I'm going to drink it, others may be offended by this. Modern West Coast IPA, but the execution is mediocre.
