This Ballambic™ beer is fashioned after the great wild beers of the Zenne Valley. Hot wort is exposed to the winter night air in our coolship, where it is spontaneously inoculated with wild yeast and microflora native to Ballard. Aeir ferments in oak for at least a year before being blended to create a delicate brew with complex tartness and minerality. Naturally conditioned, this beer will continue to develop with age.

On tap at Reuben's, pours a clear pale golden with a small white head. Aroma brings out oak and subtle bugginess. Flavour is gentle, with lacto, light oak, and a touch of bugginess. Gentle and lacking much character. Not even remotely resembling a lambic in any way whatsoever. OK.
