Resurgence is a mixed-grain saison fermented and aged in a neutral french oak puncheon. The wort was cast out onto the whole peaches in the barrel and pitched with a mix of saison, farmhouse, and brettanomyces cultures. I utilized frequent punchdowns to help break up the fruit during fermentation as the whole peaches tended to float. The wort and peaches fermented alongside each other for about 6 months, becoming something greater than each part on its own.
Speaking of the peaches, they were magnificent. Big, juicy, sweet. White flesh, a bit of red around the pits. Really interesting aroma, almost like mild strawberry. I utilized a very high fruiting ratio of 300 grams per liter resulting in very intense fruit character.
The beer has a very mild acidity, probably from wild bacteria that hitched a ride into the barrel on the peach skins. This mild acidity helps enhance the fruity characteristics while the mixed culture fermentation has left the beer very dry and "quenchy". Six months of bottle conditioning helped to bring everything together and establish the perfect level of carbonation.
It's a fruit beer unlike any I've made before, since historically I've always pulled barrel-aged (sour) beer onto fruit for a refermentation. This was something different entirely and I'm very happy with the result!

Bottle, Temporal Tasting
Cloudy blond colour. Some bugs in the aroma, some funk, some manure. Dry, highly carbonated; the scidity level is controlled, it's moderate; there is a decent presence of stone fruits; some funk; it's highly drinkable, yet it has some complexity.

750ml (thx, Tristan!) shared with Ryan @ Alex's garage. Appearance: hazy blonde with a white head. Aroma: nice bugs and farmhouse notes with noticeable peach and barrel. Taste: along the same lines, VERY bubbly, lots of fermented peaches, finishes with some tannins and woody character. Overall: this one is definitely good, becoming an excellent one while missing carbonation. The best Temporal beer for me so far!

Re-rate: Poured from 750mL bottle. Hazed yellow gold with small white head. Some nice peaches with mild wild yeast character, enjoyable, fair bit of carbonation. Enjoyable. Aug 06, 2022 (from notes; 8/3/8/4/16=3.9): Poured from bottle @ FHF 2022. Hazed gold with small white head. A balanced of sweet stone fruit and mild tartness. Quite nice.

Bottle sample at Farmhouse Fest 2022, pours a cloudy bright yellow with a small white head. Aroma brings out faded stone fruits, some grainy notes, and light oak. Flavour is full of faded peaches, wild yeast, and a touch of oak. The peaches are nice, but a little faded. Solid.

Pale and cloudy. Soft peach, mellow malts. Moderate tartness, juicy, nice bit of acid. This comes together well.
