New Paths Through Old Darkness is a blend of mixed culture barley saison inspired by stories of 19th and 20th century Belgian and French farm beers.
The 2021 blend was made from a selection of saison brewed with malted and raw barley and hopped with English and German hop flowers. The beers were tank and barrel fermented and aged until mature in neutral oak.
This beer was fermented to condition in the bottle with raw honey from Cougar Canyon Apiary, harvested in Chiliwist, Washington on 09/25/21.

750ml bottle pours out pale straw topped with a small fizzy head. Nose is light citrus zest funky notes lots going on. Taste is more of the nice tart funky citrus zest. Very nice

Poured from bottle at FHF 2022 (notes from Aug 06, 2022). Slightly hazed gold with small white head. Earthy, light pepper, feint funk, touch of wood. Very nice.

Straw, haze. Bubbly head. Nice bretty aroma, mellow brett c on the palate, and a bit of wood. Tart, buggy, tannic, delicious.

Bottle sample at Farmhouse Fest 2022, pours a clear blonde with a small white head. Aroma brings out oak, tangy white wine notes, really nice bugs. Flavour is loaded with oak and wild yeast, with some tangy wine notes and earthy rustic notes. Complex and buggy. Excellent.
