Rustic Rye Lager
Downward Is Heavenward is our take on a more agrarian style of lager. We used an old world style of Pilsner malt along with some rye in the mash. Before actually mashing in we lined our tin with Kentucky bluegrass hay and proceeded like normal. This beer was then hopped in the kettle with a blend of Spalter, Hersbrucker, and Saaz at various additions, then fermented long and cold with a lager yeast near the dear to us.

On tap at Holy Mountain, pours a clear golden with a small white head. Aroma brings out sweet biscuity malt, light earthiness, and straw. Flavour is dry, with bready malt, with light rustic notes, and straw. Dry, bready and clean, with a lightly spicy, earthy finish. Good stuff.
