Chisel Jersey, Calville Blanc, Porters Perfection, Golden Russert, Yarlington Mill, and Tremlettes Bitter apples, all grown on our farm and hand-pressed, fermented naturally in low temps and then bottled with remaining residual sugar. The bottled cider aged on its side for almost a year. We did not disgorge the residual lees, and this cider has a somewhat fuller-bodied character as a result, with some nicely rounded tannins and a hint of earthiness.

A taster shared with Josh, Matt, Phill, and Ryan during FHF WITH priceless Rachel's help (got it back!) in organizing all the mess with glasses. Appearance: hazy blonde with a white head. Aroma: nice semi-sweet fermented apples. Taste: same, bubbly, dry. Overal: good one.

Bottle sampled at BC Cider Fest 2023 as Michelin Pet Nat, pours a cloudy golden yellow with a tiny white head. Aroma is dry, with gentle earthy funk and crisp apple skins. Flavour is bone dry, with a solid earthy funk, light apple core, and a touch of acidity. A bit muted but has a nice funk to it. Pleasant.
