Fermenting our more acidic apples with blissfully resinous & aromatic Grand Fir tips, and then allowing time plus tiny & controlled oxidation to work their magic for over two years before finally giving in to the irresistible allure of toasted coconut. It. Just. Works. Very well.

Can sampled at BC Cider Fest 2023, pours a clear pale blonde with a small white head. Aroma is awkward, with lots of grapefruit and coconut, and a touch of thyme. Flavour is fairly dry, with strange spicy and earthy notes that go along with the crisp apple skins, and plenty of coconut. Dry, jumbled and gimmicky. Not very impressive.
