BC wild-fermented cider
Rootstock is a fully dry, unfiltered cider made primarily from our own heirloom and cider apples harvested in the Fall of 2021, pressed, and allowed to ferment naturally without added yeast. The blend also features a variety of apples, crabapples, and quince that were donated to us by friendly local fruit tree owners! Tart and rustic with a lingering floral finish, Rootstock pairs beautifully with sharp cheeses and artisan bread as part of a ploughman’s spread.

On tap at Dageraad, pours a clear very pale yellowish blonde with a tiny white head. Aroma brings out crisp apple skins, light sugars, no farmhouse notes. Flavour is close to bone dry, with crisp apple skins and a touch of core. No real wild yeast character, which is disappointing. Competently made, but it lacks pizzazz and just kind of falls flat. Decent but unexciting.

Darkish yellow, apple juice aroma but decent taste, lots of earthy depth, rounded sweetness, and almost mushroomy notes.
